Leechee Eyeball Blend

This is a favourite because it is so versatile. As long as you add the leechee eyeballs and green food colouring, you can use your favourite sparkling clear drink. As long as the drink is clear or light-coloured, it will work. I went for ginger ale, but we also had lemonade, ginger ale, soda and lime.

Ingredients

Clear soft drink of your choice

Leechees in Syrup (3-4 per drink)

Purple Grapes (3-4 per drink)

A few drops of green food colouring

Method: Stuff the grapes into the leechee fruit, 1 each to create the eyeballs. Pour your choice of soft drink with the leechee syrup to taste into your chosen glass. Add the green food dye to the drinks a few drops at a time until they are a bright green colour. Drop the leechee eyeballs into the glasses for the desired eyeball effect.

When it comes to fruit mocktails, seasonal is always best. Blackberries are great for their tart and strong flavour, and of course, they look the part for Halloween, too. Again, it also lets you choose your clear soft drink, except this time, the dye is all natural from the berries. You can decide how healthy to be. Choose between sugar and honey, or use a sweet soft drink.

Ingredients

Ripe blackberries (5-6 per drink)

Soda water or clear soft drink

1 tbsp sugar or honey (optional)

Fresh mint

Ice

Method: Pour the ice, blackberries, mint and honey into a cocktail shaker, or if you do not have one, use a no-spill travel mug or two plastic cups with one upside down as a lid and shake. Divide between the glasses, then top up with your soft drink of choice.

Seasonal parties are about indulgence, and if you are staying away from alcohol, it can be helpful to indulge in something else. Again, variety is the spice of life, and this mocktail can be made with any type of milk or cream. Coconut cream or whipped dairy cream are top choices, and the milk can be anything from full-fat dairy to almond, cashew or oat milk.

Ingredients:

1 cup milk (dairy, almond, oat)

1 cup coconut milk

Blended pumpkin (candy roaster is best)

6 tbsp of honey or maple syrup

2 tsp Madagascan vanilla extract

2 tbsp apple juice

Whipped cream (dairy or vegan) for topping

Chocolate sauce for topping

Method: Mix all the ingredients, excluding the toppings, in a blender until smooth with no chunks. Pour into a tall glass or Kilner decorate with cream to your own style, then use the chocolate sauce to make eyes and a mouth on the ‘cream ghosts’. If desired, you can paint an additional spooky design on the inside of the glass with chocolate sauce. Pour carefully if you do this so as not to smudge the design.
